Brett Hilton-Jones has already started making improvements to Soltree Bistro’s menu.
On Saturday, November 15, Brett coordinated a delicious menu for Tuross Head Fishing Club’s Presentation Dinner.
The entrees included a Thai Beef Salad with Chilli & Lime Sauce or Salt & Pepper Squid with Aioli Sauce. Main courses were a choice of Lamb Backstrap or Country Chicken followed by dessert of either Chocolate Berry Mousse or Passionfruit Marscarpone Crepes.
Janine Campbell of Tuross Head Fishing Club commented on Sunday: “A big thank you to the Tuross Head Country Club for the meals provided at our Fishing Club Presentation night last night.
The new chef in place for just 24 hours and did an awesome job. Three course meal for 112 people, food was outstanding and the service superb. Thank you again.”
Brett Hilton-Jones qualified as a Chef in 1980 working at the Adams Hotel in Sydney under internationally acclaimed Executive Chef Alexander Sorgi. Brett then moved to the John Dory Seafood Restaurant in Coogee where he worked with the Doyle family for five years.
An experienced Chef, Brett has owned & operated three restaurants in NSW during the 90s in Ocean Shores, Coffs Harbour and Taree.
Recently Brett’s focus has been fine dining for Chefs on the Run for 10 years.
During this time Brett coordinated huge functions including family functions for Lindsay Fox, Nicole Kidman to Keith Urban Wedding. Brett specialises in functions including weddings and enquiries are welcome.
Over the years Brett has won many awards including 2011 Best Pub Food in Country NSW in the Sydney Morning Herald Good Pub Guide.
In 2012 Brett was an Auxiliary Judge for Clubs NSW for the Best Club Food. As a Chef Brett has trained 38 hospitality apprentices and travelled extensively to Fiji, Malaysia and Vanuatu to train hospitality staff.
Brett’s favourite dishes include pastas, poultry, seafood and steak. Brett is currently reviewing the Soltree Bistro menu and will include award winning dishes on the new menu for Tuross Head Country Club. Brett’s love of seafood and premium meat cuts means we will be tasting more seafood dishes and steaks on the new Soltree Bistro menu for Tuross Head Country Club.
Brett, a J.P. for over 25 years, is a golf player with a handicap of 16. Brett and his wife Suzanne have been married for 29 years. Suzanne works for Vision Australia with guide dogs.
