"It has nothing to do with me. I won't get involved unless it isn't doing well," the veteran chef jokes.
And he doesn't expect it to falter, Perry junior, 20, having worked beside him on five start-ups.
"It's a really good opportunity for her," he says.
The 100-seat French bistro-cafe will open on Rockwell Crescent, early in August, with Rockpool chef Chris Benedet in the kitchen.
"To be honest I'd never thought about leaving Rockpool group, but this site came up," Josephine explains.
"Dad has his business partners, I was always going to do it on my own," she adds.
Describing the yet-to-be-named restaurant as "a modern take and relatively cheap", she has lofty ambitions.
"My goal is to eventually beat him [Neil Perry] in chefs hats," she says.
