Police say emergency services were called to the scene at approximately 7.45pm after reports of a crash.
Police believe a Toyota Rav 4 was travelling north on the highway when a horse ran onto the road and was hit by the car.
The 72-year-old passenger was unable to be revived by emergency services, and died at the scene.
The 67-year-old female driver suffered minor injuries in the crash, and did not require hospitalisation.
The horse was also killed in the crash.
Police said officers would conduct inquiries into the circumstances surrounding the crash, and a report would be prepared for the Coroner.
